Olivier Rouaud is Professor at ONIRIS (Nantes-Atlantic National College of Veterinary Medicine, Food Science and Engineering). His research activities deal with the transfer intensification for heat and mass transfer in food engineering. He carries out simultaneously experiments and numerical simulations on food freezing and heating, especially using electrical energy (microwave, ohmic heating, electrohydrodynamic treatments). The objective of these works is to improve the energy efficiency of the processes and the product qualities. He has supervised until twenty master students and a dozen PhD students.
